Vegan Palabok

 

 

When you hear the word 'palabok' what comes to your mind?

Palabok is a type of noodles with yellowish-red sauce and delicious toppings.

Since the recipes on this blog are all vegan, you will be able to prepare super yummy vegan palabok with simple ingredients.

 For the Palabok Sauce

1 1/2 cups water
2 tablespoons olive oil
1 vegan Knorr cube
1 cup finely chopped shallot
4 teaspoons minced garlic
1 tbsp annato seeds
1/4 cup hot water
2 tablespoons cornstarch
1/4 cold water
1 1/2 tablespoons vegan fish sauce (add more if needed)
1/4 teaspoon freshly ground black pepper


For the Palabok Noodles

4 cups water
1 8-oz package rice noodles

Or follow the instruction on the package.

For the Palabok Toppings

half block of fried tokwa
1 pack vegan meat floss
4 green onions chopped
3 pieces fried shiitake mushroom
calamansi for serving

Make Palabok Sauce

1.In a large pan, saute 1 cup finely chopped shallot and 4 teaspoons minced garlic. Set aside.
2.In a pot, bring the water to a boil in a small sauce pan.
3.Add vegan Knorr cube.
4.Combine the achuete seeds and hot water, and set aside for ten minutes.
5.Combine cornstarch with cold water and set aside.
6.Now, strain annato seeds and pour the annato liquid into the pan. Boil for 5 minutes.
7.Add sauteed shallot and garlic.
8.Slowly add cornstarch slurry.
9.Season with vegan fish sauce, black pepper and mushroom seasoning. Stir well and set aside while preparing the toppings.

Toppings

1.Fry tokwa and shiitake mushroom.
2.Drain excess oil.

Assemble the Palabok

Reheat the sauce, if desired, pour over the noodles.
Garnish with fried tokwa, shiitake mushroom and vegan meat floss. To eat, toss the noodles in the sauce with a squeeze of calamansi juice and enjoy.

Vegan Tinola (ginger soup)

  Tinolang Manok is pure comfort food! This hearty, healthy, and tasty Filipino soup is made with chicken, green papaya, fresh spinach, and a ginger-flavored broth.   Ingredients: 1 tbsp coconut oil 1 medium thinly sliced onion 2 cloves minced garlic 4 inches fresh ginger 2 tbsp vegan fish sauce 4 cups water 1 small green pared papaya 1 bunch chili or moringa leaves mushroom powder and pepper to taste Instruction: 1.Heat the oil in a saucepan over medium heat. 2.Cook until the onions, ginger, and garlic are softened. 3.Add water and boil for 3 minutes and then add vegan fish sauce. 4.Put papaya and cook until tender. 5.Add vegan chicken and simmer for 2 minutes. 6.Season with mushroom powder and pepper. 7.Add chili leaves or moringa leaves into the broth.  

Vegan Binagoongan

      Ingredients: 1/2 kilo meat magic 2 cubed medium tomatoes 1 chopped onion 2 cloves chopped garlic 1 small sliced red chili 1 medium sliced green chili 1/8 tsp ground black pepper 2 medium sliced eggplant 2 tsp mushroom seasoning for meat magic 1 tsp soy sauce to season the eggplant 1/2 cup vegan bagoong Procedure: 1.Heat oil in a cooking pan. 2.Saute garlic, onion and tomatoes. When the tomatoes are soft, add red and green chilies. 3.Fry seasoned meat magic. Drain excess oil. 4.Fry seasoned eggplant. Drain excess oil. 5.Combine fried meat magic, fried eggplant and sauteed garlic, onion and tomatoes. 6.In a separate pan, boil a cup of water. This will serve as your stock. Use soy sauce or mushroom powder to season the water. 7.Pour the stock into the rest of the ingredients. 8.Add vegan bagoong and put ground pepper to taste. 9.Remove from heat when you have added vegan bagoong. Note - add more vegan bagoong according to your taste preference.
