Vegan Binagoongan with Fried Talong


 
 
Veggie meat be our protein source in this guilt-free binagoongan recipe, and eggplant will be our vegetable. Bagoong is fermented krill turned into a very salty paste. Since this is a vegan blog, vegan bagoong will be used. Perfect, right?

Prepare the veggie meat by using the standard method below:

1 cup veggie meat soaked in hot water for 30 minutes or until fully hydrated. 
Drain and squeeze out excess water.
Chop veggie meat into half.
Fry them until brownish.
Set aside.
 
Now, prepare the other ingredients.
 
3 eggplants
1 medium-size onion
2 medium-size tomatoes
 
Slice 3 medium-size eggplants. Then season with soy sauce. Fry the eggplants. Drain excess oil.
 
In a separate pan, saute minced onion and diced tomatoes. Then add fried veggie meat. Stir slightly. Now pour generous amount of vegan bagoong. Put fried eggplant. Add green chilis if you want your dish to be spicy.
 
Mix well and enjoy a guilt-free binagoongan.

Braised Bean Curd with Black Fungus

      Need something tasty yet easy to prep? Fret no more! This braised bean curd is super tasty yet so easy with simple ingredients.   You need the following:   1 tbsp vegan oyster mushroom sauce 8 pieces soaked black fungus 8 pieces soaked and sliced bean curd 2 tsp cornstarch 2 pieces star anise 1 tsp mushroom powder 2 cup water   Instruction:   1. Do the basic prep for bean curd . After this prep, fry the bean curd. 2. Boil 2 cups of water. 3. Put star anise and vegan oyster sauce. Simmer for 2 minutes to bring out the aroma of star anise. 4. Add soaked black fungus. 5. While simmering, prepare cornstarch slurry by mixing 2 tsp cornstarch and 3 tbsp water. 6. Add cornstarch slurry. Mix well. 7. Lower the heat before adding fried bean curd. 8. Now, add fried bean curd and then take off the heat. 9. Enjoy this tasty vegan treat!        

Gluten-free Kikiam for Snacks

      Taope/Kikiam Wrapper    is used in preparing delicious kikiam snack for everyone. You will need the following:   1 block tofu for gluten-free filing 1/4 cup minced carrots 1/4 cup minced bell pepper dash of black pepper    Procedure:   1.Mash the tofu.Set aside. 2. Saute minced carrots and minced bell pepper. 3.Season with black pepper. 4.Lay the kikiam wrapper and put a tablespoon of filling. 5.Seal the kikiam wrapper with cornstarch slurry.  Cornstarch slurry - 1 tbsp cornstarch and 1 tsp water, mix well. 6.Steam the kikiam for around 7 minutes. 7.Fry the kikiam. Drain excess oil. 8.Prepare kikiam sauce.
